ABENKWAN (PALM NUT SOUP) -- (a seafood soup), ANC
2 cups palm oil (no substitutes) 1 cup onions, choped 1 chile pepper, crushed, or 1/2 tsp cayenne pepper 2 cups tomato, chopped 2 cups okra 1 medium eggplant, cut into chunks 1 lb fish or crab meat 1/2 tsp salt
In a large, heavy stew pot, boil the palm oil for 10 minutes. Add onions and pepper and continue cooking on high heat for another 5 minutes. Reduce heat, add remaining ingredients and simmer for an hour or more, until soup is somewhat thickened. Stir from time to time. If there is too much palm oil on the surface for your liking, skim it off with a large spoon before serving.
Palm nut soup recipe
600 g palm nut paste
300g smoked cat fish
1-2 litres water
2 medium onions, chopped
2 cloves garlic, crushed
200g fresh tomatoes
20ml tomato puree
1 medium size ginger, crushed
1 tsp. thyme
1 tbs. hot chilli powder
3 dried bay leaves
In a large saucepan steam beef,fish and crub with chopped onions, garlic, tomato puree and salt about 10minutes
Add chilli powder, thyme, ginger and bay leaves. Simmer for about 10 minutes
Mix palm nut paste with water, add the palm nut mixture, fresh tomatoes and okro to the meat.
Bring to the boil, reduce the heat and cook for at least an hour. (blend fresh tomatoes after half an hour).
Stir consistently to prevent soup fom scorching. serve with fufu, kenkey,yam or rice.
